It is February, a.k.a my birth month, a.k.a the beauteous month of LUV~AND~ROMANCE! So I was pondering to myself about what this all means, and I thought – “What better way to celebrate Valentine’s Day than making a huge (cruelty-free) pan of tiny cakes!” You can eat these all yourself, give them to your bae, or share them with your baeless friends. Even if (and especially if) they are those annoying friends with food restrictions! How great! Keep reading to see how to make em’.

INGREDIENTS:

1 cup all-purpose flour
1 cup sugar
1 cup hot water
1/2 cup baking cocoa
1 tsp. baking powder
1 tsp. baking soda
1/3 cup vegetable shortening, melted
1 tsp. ground flaxseeds

Glaze + Icing

4 squares semi-sweet chocolate
5 tbsp. vegetable shortening
1/2-3/4 cup icing sugar

HOW-TO:

STEP 1: Preheat oven to 350 degrees. In a mixing bowl, combine the first 7 ingredients. Mix ground flaxseeds with 1 tsp. water, then add to mixture.vegan-chocolate-cupcakes-5
STEP 2: Pour into a greased 12-tin muffin pan. Bake for 20 minutes, or until toothpick inserted into the center comes out clean. Let cupcakes cool, then remove from pan.

STEP 3: Put chocolate and 3 tbsp ingredients into microwave-safe bowl. Heat for 1 minute, then stir. Repeat in 20 second increments until smooth. Let glaze cool for 10 minutes, then dip tops of cupcakes into glaze. Let dry.vegan-chocolate-cupcakes-7
STEP 4: To make icing, mix remaining 2 tbsp. of shortening with icing sugar until desired consistency is reached. Place into piping bag (or Ziploc bag, cut in the corner). Pipe messages onto cupcakes.
